Banana Bread

Hey there!
This week I chose to feature some delicious banana bread that has a healthy twist on it. My mom had some bananas that were just about ready to say goodbye so I instantly knew banana bread was the thing to make!I myself have been eating well so I figured that making a bread that wasn't so bad wouldn't make me feel so guilty right?! 

Banana Bread


To make this bread you need:

A few bananas ( preferably gross like these )
 Whole wheat flour
Baking Soda
Salt
Apple sauce no sugar added
Honey
Eggs
Cinnamon ( only if you want )

Now lets start making this bread because I am hungry!
Set your oven to 350 degrees.
 Like most other breads, pastries, desserts we need to first combine all the dry ingredients. The only dry ingredients you need for this are the whole wheat flour, Baking soda, and salt.


Oh and if you love cinnamon go ahead and add the cinnamon to your dry ingredients!




Dry ingredients are prepared so now lets prepare the wet ingredients! It's time to start mashing those mushy gooey bananas. It isn't the most beautiful thing in the world to do but boy it will make your bread delicious. The other ingredients are the no sugar added applesauce, eggs and honey.
Just wait!
I know you want to mix all those wonderful ingredients together but before you put the eggs in go ahead and beat them.


Oooh aaah look at all that!


So I just have to share my genius way of not having to waste a paper towel because I am brilliant and well I just hate having to waste something.


Anyways, back to the bread! Slowly add the dry ingredients to the wet ingredients and mix it in.




Once all the dry ingredients are mixed in with the wet ingredients go ahead and pour your batter into the pans. Make sure the pans are greased. I used two small bread pans but if you want you can use one big bread pan about 9 x 5.


Place the pans or pan in the oven. If you chose to use two small ones like I did then go ahead and bake the bread for 30 minutes but if you used a larger pan you can bake it for 60 minutes.


Oh hey look its already been 30 minutes! Yay now we can take the bread out and smell all the delicious smells! Make sure to let it sit in the pans for about ten minutes then go ahead and flip them out onto a rack or whatever you choose. I chose my favorite cake pan just because I love getting to use it!  YUM!


The applesauce and honey make this bread so moist you'll love it!

Greek Marinated Chicken

Hey Guys,
I'm sorry about the delay in any new posts! I was busy spending time with my husband on his last week home before he left for boot camp. It has been an interesting adjustment but hey that's what happens when you are a sailors wife!
I plan on giving you guys a new recipe every week! This week I am featuring Greek Marinated Chicken and I hope that you all enjoy it.

Greek Marinated Chicken

Like always I love lining up all my ingredients to get prepared!


The first part of making this delicious chicken is to marinate it so we are going to start out by making the marinate.
The ingredients required for this marinade are:
Plain yogurt
Garlic
Lemon juice and lemon zest
Parsley
Oregano
Pepper
Salt
Don't forget the chicken. I chose drumsticks but you can choose to use any kind you prefer.
Of course you don't just throw the whole lemon in or the whole bunch of parsley so we need to prepare these things.



Now we can take all of the ingredients and throw it all in the bowl. Don't you love just being able to put everything in one bowl, I sure do! 


I'm sure you've noticed I waited to put the parsley in. After mixing these ingredients I then mixed the parsley in.


It's now time to marinate the chicken. Normally you want to take a big ziploc bag and marinate it in that but silly me I bought the wrong size of bag so I chose to use a glass container.


Then go ahead and plastic wrap it so that it has a tight seal on it. ( If you used a ziploc bag don't worry about this step.) Now set it in the fridge and marinate it for at least 30 minutes.


Tick tock.. tick tock..... oh yay the chicken is done marinating! Go ahead and set your oven to 375 degrees Fahrenheit and pull your chicken out of the fridge. I transferred the chicken to another dish because the chicken needs a little more space to cook.


Cook the chicken for about 45-60 minutes in the oven. Make sure it is cooked thoroughly and a golden brown color on the chicken.



All done! I chose to pair my chicken with some broccoli slaw! You can choose to pair whatever you want with it. An idea I have for next time is a yummy couscous salad. Maybe I will try that next time!
